I'm working on the same thing as well, so I'll be able to give some advice when I'm done. Hopefully... ^_^

I am no genius at this, but I think I manage to draw half-decent semi-realistic horses at times... if you want I could make a tutorial, but as I said before, I am no genius at this of drawing realistic horses -- or horses in general x__o

(as a note, you may wish to draw the image out // outline the image before you start coloring it or anything..)

1. Examine the Image.
-For example, look at the way the horse's head is. Is it turned toward you? Away from you? Is it a side view? Take all of these into consideration.

2. Simplify it.
- no, this isn't for algebra or anything...I mean take basic shapes and fit them to the horse. You can use circles, ovals, squares, triangles...all of which can be made by tools or the Pen tool

3. Color - one step at a time.
-Set your base color, then use the airbrush, or brushes with a lower opacity setting, to layer colors over it.

4. Smudge.
-Ah the lovely smudge tool. This will help you blend the colors and make directions for the mane, tail, and body hair.
